I only had to change it for my pkexec dolphin, but I decided to make a post about it to help others. I know this was a recent change by KDE, but some newer users may not know they can change this.
Note: Our more advanced users have been stepping up and doing things like this. The effort is appreciated.

I rather dislike the ugly frame, compared to older Plasma versions look.
Making it editable does not fit my taste either.
I liked the older look but the newer style is growing on me.
I find it convenient being able to just click up a directory by clicking on the upper directory in the address bar, but also if you click to the right-most of the current directory in the address bar the path still becomes editable as before (without having to change any settings).
One of my best liked features of Dolphin is middle-mouse-clicking on any directory and it opening in a new tab underneath the address bar, which is one of the things I like about Dolphin.
This is all with default Dolphin settings.
That’s why I am a big fan of the up arrow. However, I am not big on tabs. I would rather have a new window. It’s just personal preference.
I cant remember the last time I used those, the sidepanel locations/devices plus the address bar and tabs caters to all my needs
My toolbar will never miss the arrow-up, as well as some other icons for convenience. I always set my stuff the same because I want to feel home in all my systems or virtual machines
Not a big fun of tabs either here btw.
After having to deal with Gnome Files I have no complaints about Dolphin with either setting, though I do prefer the default location bar. The panels are nice too. I’m not one for using the terminal panel, but being able to use the “Folder” panel instead of the “Places” panel is very nice to have.
Oh, and I mostly solved my Gnome Files problem by installing Nemo and making it the default. It took some doing too as Gnome does not make that easy. I recall having to run some arcane Gnome config command to expunge the last remnants of the Nautilus/files default status (I think maybe it was for the Super + F shortcut).

However, notice the checkmark over on the right end of the location bar? If you click on that checkmark icon, the location bar reverts back to its default appearance. But I assume you don’t want that. All of us sometimes click in the wrong spot. Whoever says otherwise is lying.
How to get it back to the new look without jumping through hoops in the settings?
Easy, using your example for reference. Just click on that dead space to the right of the location, /usr/share/applications/ and to the left of the edit (pencil) icon. Or just click on the edit (pencil) icon.
At least, it works for me.
I am posting this for anyone new to OM and is already acclimated to Plasma, but is coming from a distro that is always about a year to several years behind in having the latest Plasma features.

I prefer the default view. It makes jumping back more than one directory a one-click affair. The folder icon next to the directory name is actually a dropdown menu of all adjacent directories. Navigating between folders is a breeze with the default view.
