In a new installation of Rock 5.0 “stellarium” is not in REPOs - why?

It is there, but you need to enable the unsupported repository. Apparently in version 5.0 only the main repository is enabled by default.

Yes, stellarium is available in unsupported repository and this repo is not enabled by default.
Issues with sky in stellarium is probably occurs due to the lack of good 3D acceleration in virtual machine. On the installed system on bare metal - steallarium works without any problems.

There are a few changes in the log about zink (zink is an implementation of vulkan on opengl), unfortunately it does not work very well on virtual machines, but you can try to install it using the command: sudo dnf install lib64dri-drivers-zink

Installing lib64dri-drivers-zink gets rid of the MESA-LOADER:failed to open zink: but Stellarium still does not seem to work in VBox.

Stellarium does not work in VBox. It won’t.
It does work in hardware.

According to the stellarium wiki, newer versions may even require OpenGL3.0, which is unlikely to be supported on virtualbox.

As possible solution you can try force stellarium to run with software rendering using this env QT_ANGLE_PLATFORM=warp

Also you can change in vbox graphics oprions to this: VMSVGA or VBoxSVGA.
